- ½ cup rolled oats
- 1 medium zucchini, grated, squeezed lightly

Hey there! Let's get baking. First up, preheat your oven to 200°C. Then, grab a 3/4-cup (180ml) Texas muffin tray and line 4 of the holes with either non-stick cafe-style muffin cases or squares of baking paper. Easy peasy, right? Now let's make some delicious muffins!
Boil a cup of water and let a tea bag steep for 5 minutes. Meanwhile, combine apples, oats, and tea in a bowl. Let it sit for 20 minutes until most of the liquid is absorbed. Add zucchini, a mixture of 8 scoops of Ensure with ½ cup of water, an egg, and some maple syrup. Stir well.
Sift the flour, baking powder, and spices into a big bowl. Remember to return the husks to the bowl too! Next, make a well in the center and add the zucchini mixture and half of the linseeds and pepitas. The mixture may seem thick, but that's normal. Lastly, spoon the mixture equally into paper cases and sprinkle the rest of the linseeds and pepitas on top.
Let's bake some delicious muffins! 30 minutes in the oven or until a skewer poked in the center comes out clean should do the trick. And if they start to burn on top, don't worry, just cover them with some foil. After they're done, let them hang out for 5 minutes on the counter before transferring them to a wire rack to cool.
